This worked for me to get around the libplist error:

export LIBPLIST_LIBS="-L/usr/lib  -lplist-2.0"
export LIBPLIST_CFLAGS="-I/usr/include"
yay -S plist-viewer

Build fail

checking for LIBPLIST... no
configure: error: Package requirements (libplist) were not met:

Package 'libplist', required by 'virtual:world', not found

Consider adjusting the PKG_CONFIG_PATH environment variable if you
installed software in a non-standard prefix.

Alternatively, you may set the environment variables LIBPLIST_CFLAGS
and LIBPLIST_LIBS to avoid the need to call pkg-config.
See the pkg-config man page for more details.

I have libplist installed

$ pacman -Q libplist
libplist 2.2.0-3
