The reason for undefined reference to `SSLv3_client_method' is the removal of SSLv3 support in OpenSSL. The package needs to be to compile without SSLv3 support. As far as I can see (I have only taken a quick look), the SSL support can be turned OFF or ON; there is no finer grained control. The quick workaround to this problem is removing "ENABLE_SSL=yes" from the PKGBUILD but it isn't really a solution. If I find a fix, I'll apply it. If you get there first... let me know :)

It seems a dependency is missing: /tmp/cckEKOav.o: In function `message_tell': libspamc.c:(.text+0x1d00): undefined reference to `SSLv3_client_method' (Tried to install using pacaur -Syu spamassassin-spamc)

I could not get the package from the above URL. I found it elsewhere and changed the PKGBUILD to: source=(http://mirrors.ibiblio.org/pub/mirrors/apache/spamassassin/Mail-SpamAssassin-${pkgver}.tar.gz)
