Thanks @coxackie, looks like some restructuring of where things are. Since this is a split package the PKGBUILD needs to keep up with any restructurings in order to make the individual packages. I'll fix it!

I've submitted a fix to Yaru for the aforementioned build issue:
https://github.com/ubuntu/yaru/pull/1585
This AUR package works once the fix is applied. I don't think any changes need to be made to the PKGBUILD, I don't see any other problems and the dark shell theme variant is selectable in gnome-tweaks.

This is likely due to changes that build both the light and dark shell themes, modifying the install directory layout somewhat:

I'm having a problem with this at the moment, as the gtk and gnome-shell theme packages contain some of the same files:
Looks like these should be rm'd from the gnome-shell-theme package?
